A wing steak (also known as a club steak or bone-in striploin) is a premium, triangular-shaped beef cut taken from the end of the short loin closest to the rib. It is essentially a T-bone steak with the tenderloin (filet mignon) side removed, leaving a tender, bone-in striploin.
